Make & Do: Perfect Pesto

When our VP isn’t at the office, she enjoys preparing scrumptious dishes for her husband and daughter. Although a bit palette challenged at age 3, her picky little princess will devour a fair share of pasta. So as you can imagine there are quite a number of pasta dishes mastered in their kitchen. Fortunately for all, she’s willing to share her simple steps for amateur-proof pesto.

First pick and wash your basil, selecting on the best leaves. Then place two handfuls of the basil in a food processer along with 2 cloves of garlic and 15 pine nuts and process until pureed. Next add ¼ cup good Parmigiano Reggiano (she’s married to a true Italian so only the best will do). Then add olive oil-- a bit at time-- process, and continue until smooth. Add to your favorite pasta and dinner is served. Enjoy!
